Olive Harvest
Olive oil is the lifeblood of Dalmatia, and this fall, I had the privilege of spending time with friends on both Hvar and Šolta. It’s a simple, unhurried process, steeped in tradition. On both islands, olives are carefully picked by hand, then rushed to the mills to be turned into liquid gold—often the same day. Mills like Poje on Hvar and Uljara Božić capture the essence of the island’s soil, transforming the freshly picked fruit into extra virgin olive oil that’s bursting with flavor and free of defects.
