Best Pizza in Bologna

If you ask an Italian where to find the best pizza, you will surely be the catalyst for a passionate debate. Italians take their pizza very seriously (in the best way). On Bolla Day, we experienced this first hand.

(Side note: Bolla Day was a sparkling wine tasting event that took place on Sunday June 9th, at the Mercato delle Erbe and surrounding bars, which is the street where we live , where people toast the European Union with the finest bubbles from all over Europe.)

We were having wine with a couple of the guys who work at the bar, where we often stop for aperitivo, and they did just that. Of course, anyone within ears distance had to join in. We were asking for something very specific though, Neapolitan-style pizza, not Roman. You will find both here in Bologna. Roman style is delicious, thinker like a Sicilian slice and cut in squares. Neapolitan, on the other hand, is a traditional thin-stretched round pie with a crisp bottom and a crunchy yet chewy crust on the edge. This is our preference.

After much debate, we were given a list of four recommendations. It took us two months, but I am proud to say that we visited each place and rated them according to our American, yet pizza-experienced, palates. We did report back to our wine-drinking buddies about the greatness of Span and the disappointment of Da Michelle. They believe that we do not understand Neapolitan style pizza, but I stand by our review.

We do not recommend this pizza at all. Only adding it to the list because it was one of the four recommendations. The crust was very undercooked. There are a million better pizzas in Bologna.

Honorable mention: Pistamentuccia

This was our favorite stop for slices. Pistamentuccia offers Roman style pizza (much different than the above Neapolitan styles). Their dough follows a rigorous slow and controlled leavening process that extends over 72 hours, allowing the dough to develop an unmistakable flavor and texture. Crunchy on the outside and fluffy on the inside. Also, we felt that their sauce was superior to all of the above.
